Koreans usually make huge batches of kimchi when the weather gets cold.<br />The low temperatures help kimchi ferment properly, but this year that time will come two to four days later than last year.<br />Korean weather authorities are advising people in Seoul to make kimchi on December 3rd, the 5th for those in Daejeon, while people in Busan should wait until January 4th.<br />Temperatures, they say, will be too mild before then.<br />Experts say the recommended dates for making kimchi is almost two weeks later than it was in the 1920s.<br />
