Few ingredients from your pantry combined and you have dessert made in 5 minutes! <br />MICROWAVE COCONUT FUDGE (KOPRA PAK/COCONUT BARFI) <br />INGREDIENTS: <br />For fudge: <br />* 7 oz pack Unsweetened coconut flakes <br />* 14 oz can Condensed Milk <br />* 1/2 teaspoon ground cardamom seeds (elaichi) <br /> <br />For topping: <br />* Sliced Almonds & Pistachios (or nuts of your choice) <br /> <br />DIRECTIONS: <br />1. Stir together the coconut and condensed milk in a large, microwave-safe bowl. <br />2. Cook on High in the microwave for 3 minutes, stirring every minute. <br />3. When the coconut mixture is hot and bubbling, stir in the cardamom. <br />4. Pour into a plate greased with butter or ghee (clarified butter), and smooth the top with a spatula. <br />5. Top with sliced almonds and pistachios. Let cool and then cut into 1 inch squares with a greased knife. <br /> <br />Note: Microwave used is 1200 watts.
