Still hoping your Luau will turn out better than mine. <br /> <br />Part 1: https://youtu.be/dTCVmiykg9w <br /> <br />~Ingredients for Luau Stew~ <br />- 2 pound luau leaves <br />- 2 pound cooked squid, octopus, chicken, or pork <br />- 1 tsp Hawaiian salt <br />- 1 can coconut milk <br />- 7 chilli peppers (optional) <br />- 1 tbsp sugar (optional, I don’t use it) <br /> <br />~Prep the luau leaves (not necessary if you bought frozen taro leaves)~ <br />- Cut off the stems and peel the fibrous outside off <br />- Chop up the stems and the taro leaves into small chunks <br />- Boil in water for an hour <br />- Drain water out <br /> <br />~Luau Stew Instructions~ <br />- Simmer prepped luau leaves with chilis in coconut milk for 30 minutes <br />- Stir in salt, meat, and sugar (I think it tastes sweet naturally but some ppl like it sweeter) <br />- Enjoy with rice! <br /> <br />***Luau Stew Cheat if you have or find Laulau*** <br />- Cook Laulau in crockpot with coconut milk <br />- Eat and be happy you got to skip all the prep! <br /> <br />~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ <br /> <br />~Ingredients for Chicken Long Rice~ <br />Broth: <br />- 2 pounds chicken thighs, bone in <br />- 1 sweet onion <br />- 3 cloves garlic <br />- 2 inches ginger, add more if you love ginger like me <br />- 5 chilli peppers (optional) <br />- 3 cups of water <br />- 1.5 tsp Hawaiian salt or regular salt* <br />The Rest: <br />- 4 oz long rice. Try and get the ’Nice’ brand <br />- 1.5 tsp Hawaiian salt or regular salt* <br />- Lots of green onion <br />- Zucchini, shimeji mushroom, or other vegetables (optional) <br /> <br />~Chicken Long Rice Instructions~ <br />Broth: <br />- Simmer all ingredients for broth in the water for 45 minutes or until chicken shreds easily with a fork <br />- Strain and let sit in refrigerator over night <br />- Shred the chicken and save for next day <br />The Rest: <br />- Skim the fat off the broth then bring to boil <br />- Simmer whatever vegetables you'd like to add in the broth until cooked <br />- Turn off heat and mix in salt <br />- Once salt is dissolved add noodles <br />- Wait for noodles to soak up broth, about 15-20 min <br />- Mix in a third of the shredded chicken** with green onions <br />- Eat long rice with short rice! (really traditional) <br /> <br />*My Uncle Waiau doesn’t use salt at all and uses chicken broth instead, powdered Chinese chicken broth so not to add more liquid.
