https://youtu.be/9YE2YZUM-UI <br /> <br />CHICKEN HAMONADO RECIPE l WHOLE CHICKEN HAMONADO WITH PINEAPPLE JUICE l HOW TO COOK CHICKEN HAMONADO <br /> <br />Ingredients : <br /> <br />1 whole chicken (4 lbs ) <br />1 - 1 ½ cup pineapple juice <br />¼ cup pineapple chunks (optional) <br />1 head of garlic, crushed <br />½ cup sugar <br />¼ cup soy sauce <br />1 tablespoon salt <br />¼ teaspoon ground pepper <br />2-3 pcs bay (laurel) leaves <br />2 tablespoons oyster sauce <br />1 tablespoon cornstarch <br />¼ cup of water <br />2 tablespoon oil for basting (or melted butter) <br />twine for trussing <br /> <br />Directions : <br /> <br />Marinating the Chicken: <br />(1) Combine the following ingredients: <br />a. pineapple juice <br />b. sugar <br />c. soy sauce <br />d. 3-4 cloves garlic <br />e. ground pepper <br />f. salt <br />g. oyster sauce <br />(2) Mix <br />(3) Add the chicken. <br />(4) Rub the mixture all over it. <br />(5) Put everything inside the sealed plastic bag. If possible, keep all sides soaked in the mixture (turn) every 2 hours. <br />(6) Let it stay overnight or at least 6 hours. <br /> <br />Marinating is up: <br />(1) Take the chicken out from the plastic bag. <br />(2) Fill the inside with garlic and bay leaves. (you may use as well the garlic used in the mixture). <br />(3) Tie the chicken snugly (trussing) with the kitchen twine to make sure the legs and wings stay close to the body. Trussing helps to cook the chicken evenly. <br />(4) TIMER : Pre-heat the oven to 350 degrees F ( 180 degrees C) <br />(5) Set the chicken in the roasting rack <br />(6) Transfer the leftover marinade in the bowl. Divide it into 2. One for basting. One for the gravy mixture later. <br />(7) BASTING MIXTURE: Add a little bit of oil (or melted butter if you wish). Set aside for basting later. <br />(8) Once the oven temperature is set, cook the chicken for 30 minutes <br />(9) After 30 minutes, start basting. (To make sure the chicken is succulent and full of flavor) <br />*** Using your basting brush, make sure the marinade is spread evenly. <br />(10) Cook for another 15 minutes, then baste the chicken again. <br />(11) This time, turn the chicken on the other side and baste. <br />As a rule of thumb, you should baste at least 3 times (every 15-20 minutes) during the whole process. <br />(12) Cook for another 30-40 minutes (@350 degrees). <br />(13) Then, increase the temperature to 375 degrees. <br />(14) Cook each side for 10 - 15 minutes.
