Kande pohe is a very popular breakfast dish in Maharashtra. Pohe is made from flattened rice. It is served with tea and probably the most likely dish that Maharashtrians will offer to their guests. <br /> <br />Ingredients <br />Thick Poha/flattened rice (150 gms) <br />1 Large onions <br />1 medium potato <br />3-4 tbsp oil <br />1 tsp mustard seeds <br />Pinch of asafoetida (hing) <br />3-4 green chillies <br />6-7 curry leaves <br />½ tsp turmeric powder <br />Salt (according to your taste) <br />1tsp sugar (optional) <br />Garnish: <br />Grated coconut <br />Coriander leaves <br />Sev <br />Lemon <br /> <br />Method: <br />1. Heat the non-stick pan and add oil. <br />2. Add mustard seeds and let them crackle, now add asafoetida, curry leaves, green chillies, coriander leaves, onion, saute till the onion turns golden brown. <br />3. Once the onion gets golden brown add turmeric powder, salt and mix. <br />4. Add potatoes mix well, cover and let it cook for 4-5 minutes. <br />5. While the potatoes are cooking wash the poha and drain all the excess water and let it sit for 4-5 minutes. <br />6. Check if the potatoes are cooked. <br />7. Once the potatoes are done add the soaked poha sprinkle some water and let it cook over medium heat for 10 minutes. <br />8. After 10 minutes if you think poha has dried sprinkle some more water and let it cook for 2 more minutes. <br />9. Now add salt, sugar and coriander. Sugar is optional, you can skip the sugar part. <br />10. Do not soak poha in water for long time. Draining the water completely is most important. <br />2. Potatoes may be replaced with peanuts or sweet peas. <br />3.
