If you&apos;re not into ginger, use coconut biscuits instead. <br /><br />The filling does contain egg yolk but it&apos;s a cooked custard, not like other mousse-type pie fillings. If you&apos;re not into coconut, substitute the coconut milk with cream, and add melted chocolate for extra taste. Or turn it into a lime flavoured pie – coconut and citrus make a tasty combination.<br /><br />Meanwhile, the meringue topping should be soft and billowy.
