Smashed avocado bread with poached egg <br /><br />Keep yourself full until lunchtime with this healthy breakfast boost<br />*<br />Recipe in English <br />Ingredients:<br />Egg : as required or 1 (room temperature)<br />Bread any choice of yours : as required or 1 slice <br />Avocado : 1/2 <br />Butter : 2 tsp<br />Salt : 1 tsp <br />Vinegar : 1 tbs <br />Salt & red chilli flakes : as to taste <br />Directions:<br />Bring a deep pot of water to the boil, add the vinegar and a salt.<br />Crack an egg carefully into a cup, then gently pour the egg into the water<br />allow to cook for 2 minutes turn off flame cover the pot with lid and steam cook for 2-3 minutes for a medium poached egg.<br />To prepare the toast, simply choose your favorite bread (whole grain,brown or white bread)spread butter on both sides and toast it on skillet or bake in oven. Mash the avocado ,<br />Remove the eggs with a slotted spoon and place on the paper towel,spread the mashed avocado on the toast and top with a poached egg, sprinkle salt and red chilli flakes Serve immediately.<br />Tips; <br />(1)<br />The poached eggs can be prepped in advance and stored in an airtight container for up to 4 days in the refrigerator. Heat in microwave for 30-60 seconds or until heated through.<br />(2)<br />Store the smashed avocado in airtight container for up to 3 days in the refrigerator. To keep the mashed avocado from browning, top with a thin layer of water; before using, drain the water off and stir the mashed avocado.
