The voice behind the popular blog “Chicano Eats” shares his new cookbook “Chicano Eats: Recipes from My Mexican-American Kitchen” on “Salon Talks.” Author Esteban Castillo opens up about how he turned his family’s favorite recipes and drinks into a book of dishes that celebrate cooking authentic Mexican cuisine in America and pay tribute to the history behind each recipe. <br /><br><br /><br><br />Castillo also spoke to establishing better representation in the food media industry at large. “I feel like a lot of white chefs are applauded and given a platform for doing the same things that people of color are doing and have been doing,” he told Salon’s Joseph Neese. “When you look at their work, a lot of them are seen as innovators and we don't really get that chance to shine.”
