Nihari Masala Recipe by Slice & Dice | Authentic | Traditional Nihari Masala| Homemade Nihari Masala | Bakra Eid Special<br />Just like garam masala, Nihari masala is a mix of whole aromatic spices. The whole spices like cardamom, fennel, cloves, nutmeg, dry ginger, etc are roasted and then ground to a powder. The masala mix is best when prepared fresh but you can make it in larger quantities and store it in an airtight container. The homemade nihari masala keeps well for up to 6 months.<br /><br />Ingredients<br />3 tbsp (17 Grams) coriander seeds<br />2 Tbsp (14 grams) fennel seeds<br />1 tsp (3 grams) cloves<br />1 tbsp (9 grams) black peppercorns<br />6 sticks 1 inch long (3 grams) whole cinnamon<br />9 - 10 (6 grams) anise seed<br />3 pieces (12 grams) kachri<br />3.50 grams nutmeg<br />3.50 grams mace<br />4 - 5 (3 - 4 grams) black cardamom<br />1 tbsp (7 grams) ginger powder<br />7 - 8 pieces (3 - 4 grams) whole round red chili<br />3 - 4 (2 grams) pipli<br />4 - 5 leaves (1.50 grams) Bay Leaves<br />1 tbsp. (11 grams) white cumin seeds<br />1/4 tsp (1- 2 pinch) citric acid<br />10 - 12 (3 grams) green cardamoms<br />2 tbsp. (17 grams) red chili powder<br />1/2 tbsp (13 grams) salt to taste<br />1 & 1/2 tsp.
