T-bone Steak <br /><br />For the Fat<br /><br />Seitan <br /><br />Ingredients<br /><br /><br />1350 g of whole wheat flour<br />710 mL of cold water<br /><br />Method <br /><br />Mix the flour and water together into a dough. Set out a big mixing bowl and measure out 1350 g of whole wheat flour. Pour 710 mL of water into the flour, which will help you form a nice, firm dough. Knead the dough <br /><br />Submerge the dough in cold water for 8 hours. Set your dough in the same mixing bowl, covering it all the way with cold water. <br /><br />Then wrap the bowl with a clean cling wrap.<br /><br />Wash dough with clean water until only the gluten is left<br />You may need to make this in batches and freeze what you won't use.<br /><br />Take 150g seitan, rip it into few small pieces and drop in a high powered food processor.<br /><br />add 50ml vegan coconut oil.<br /><br />add msg/Umami/salt<br /><br />Blend till well mixed.<br /><br /><br />now it's ready you can keep aside.<br /><br /><br />T-Bobe steak<br /><br />Ingredients<br /><br />*1 cup Canned black beans (Drained) (250g)<br />*2 tablespoons Nutritional Yeast <br />*1 tsp Garlic Powder<br />*1 tsp Onion Powder<br />*2 tsp Ground pepper<br />*2 tsp smoked paprika<br />*2 tbsp Soya Sauce<br />*1 hoisin sauce<br />*2 tsp apple cider vinegar<br />*2 tbsp red wine vinegar (vegan)<br />*¼ tsp Liquid Smoke<br />*2 tsp worstershire sauce<br />*2 tsp maple syrup<br />*½ cup Vegetable Stock (120ml)<br />*1 ¾ cups Vital Wheat Gluten (263g)<br /><br /><br />For the Marinade: (revised version)<br /><br />*¼ cup lemon juice (60ml)<br />*1 tsp Paprika<br />*⅛ tsp Liquid Smoke<br />*200ml olive oil<br />*1 tsp salt<br />*1 tsp crushed garlic<br /><br />Instructions<br /><br />Add all ingredients into the food processor besides the vital wheat gluten and process until well mixed.<br />Transfer to a mixing bowl and add the vital wheat gluten. Stir in with a spoon briefly and then get in there with your hands, mixing it into a dough. Knead the dough for around 2 minutes, you want it to go from sticky and soft to firm and stretchy, so that when you pull it, it snaps back into place. Make sure you don’t over-knead it because that will cause your steaks to become very tough.<br />As soon as you have a firm, stretchy texture, flatten it out and cut it into your preferred sizes to make your T-bones.<br /><br />Steam the steak for an hour. Prepare your marinade sauce by adding all the ingredients to a bowl and whisking them together. Let it sit for a little while and then whisk again. You want it to be nice and smooth.<br />After steaming for 1 hour, place the steaks into a square dish. Pour over the marinade sauce and use a brush to make sure the steaks are properly covered. Turn them over in the sauce a few times.<br /><br />Braai the steak as per video<br /><br />Serve the way you prefer, I find mushroom sauce, veg and roasted sweet potato perfect for this steak.<br />
