Shaoxing Candy, also known as Red Shaoxing Candy, Red Shaoxing Silk, belongs to the special local delicacies in southern Sichuan. The raw material for making is fresh sweet potato (red stalk), which is shredded and quickly fried into golden brown, then supplemented with peanuts, sesame, and maltose.
