How to make sausage meatballs - Great British Bake Off 'snow day' food

This recipe is sure to keep you warm and it's cheap too says Great British Bakeoff's Karen Wright.<br /><br /> Sausage meatballs<br />Serves four<br /><br />Ingredients<br />Meatballs<br /> 8 sausages<br /> 1 Tbs tomato puree<br /> Salt and pepper<br /> 1 Tbs oregano<br /><br />Sauce<br /> 1 Tbs oil<br /> 1 chopped onion<br /> 8 thickly sliced mushrooms<br /> 4 thickly sliced tomatoes<br /> 3 cloves garlic crushed.<br /> 1 Tbs oregano<br /> 2 Tbs balsamic vinegar<br /> Splash water<br /> Salt and pepper<br />Method<br />Squeeze the sausage meat out of the skins and mix it with the puree, oregano and salt and pepper.<br />Form into balls the size of a walnut. Heat a frying pan with the oil and brown the meatballs well.<br />Remove them to a plate.<br />Gently cook the onion in the pan for a few minutes and then add the mushrooms. Cook this for a<br />few minutes and then add the tomatoes, garlic, and oregano. Allow everything to wilt down and<br />then return the meatballs to the pan. Cook for about fifteen minutes making sure to stir. Add the<br />balsamic and a bit of water to loosen. Season with salt and pepper.<br />Serve with mashed potatoes, polenta or pasta.
