Make the most tempting Bihari qeema box paratha with this simple step by step recipe.<br /><br />Ingredients:<br />-Khashkhash (Poppy seeds) 1 tbs<br />-Dahi (Yogurt) ½ Cup<br />-Pyaz (Onion) fried ½ Cup<br />-Beef qeema (Mince) 500g<br />-Kacha papita (Raw papaya) paste ½ tbs<br />-Adrak lehsan paste (Ginger garlic paste) 1 tbs<br />-Lal mirch (Red chilli) crushed ½ tbs<br />-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs<br />-Namak (Salt) ½ tsp or to taste <br />-Lal mirch powder (Red chilli powder) ½ tbs or to taste <br />-Zeera (Cumin seeds) roasted & crushed 1 tbs<br />-Sarson ka tel (Mustard oil) ¼ Cup<br />-Pyaz (Onion) sliced 1 medium<br />-Hari mirch (Green chillies) sliced 3-4<br />-Adrak (Ginger) julienne 1 inch piece <br />-Hara dhania (Fresh coriander) chopped 1-2 tbs <br />-Koyla (Charcoal) for smoke <br />-Rolled dough<br />-Maida (All-purpose flour) 3 tbs<br />-Water 3-4 tbs or as required <br />-Ghee (Clarified butter) 1-2 tbs <br /><br />Directions:<br />-In a grinder,add poppy seeds & grind well.<br />-Add yogurt,fried onion,grind to make a paste & set aside.<br />-In a bowl,add beef mince,raw papaya paste,ginger garlic paste,red chilli crushed,coriander seeds, salt,red chilli powder,cumin seeds,ground paste & mix well,cover & marinate for 35-40 minutes.<br />-In a wok,add mustard oil & heat it.<br />-Add onion & fry for 1-2 minutes. <br />-Add marinated beef & mix well until it changes color,cover & cook on low flame for 14-15 minutes then cook on high flame for 2-3 minutes. <br />-Add green chillies,ginger,fresh coriander & mix well.<br />-Give coal smoke for 2 minutes & set aside.<br />-Take dough ball (250g),sprinkle dry flour & roll out into thin rectangle shape with the help of rolling pin.<br />-Trim edges & cut into two 5x15 inch strips.<br />-In a bowl,add all-purpose flour,water & whisk well.Flour slurry is ready!<br />-Take two sheets,apply flour slurry on the center,place one sheet horizontally & place second sheet vertically over first one,it will make plus (+) sign.<br />-Add prepared bihari qeema filling in the center & fold one side so that it covers the filling.<br />-Apply prepared flour slurry & fold all sides to make a square box,press & spread gently. <br />-On heated griddle,add clarified butter,let it melt & fry on low flame from all sides until golden brown (makes 6).<br />-Cut into pieces & serve with raita!
