Mango Coconut Fudge Barfi Recipe by Food Fusion

Experience a slice of paradise with our Mango Coconut Fudge Barfi, made even more delightful with Olper's Tarrka! <br /><br />Ingredients:<br />-Aam (Mangoes) fresh or frozen 2 medium<br />-Nariyal (Fresh coconut) 1 medium<br />-Olper’s Tarrka Desi ghee 2 tbs<br />-Olper’s Milk ¼ Cup<br />-Sugar ½ Cup or to taste<br />-Olper’s Milk powder 1 & ¼ Cup<br />-Elaichi powder (Cardamom powder) ½ tsp<br />-Olper’s Tarrka Desi ghee 1 tsp<br />-Olper’s Tarrka Desi ghee 1 tsp<br />-Kaju (Cashew nut) half <br />-Pista (Pistachios) chopped<br />-Rose petals <br /><br />Directions:<br />-In a blender jug,add mangoes,blend well & set aside (1 & ½ Cup puree).<br />-Finely grate fresh coconut in a bowl & set aside (1 & ½ Cup). <br />-In a frying pan,add desi ghee & let it melt.<br />-Add fresh coconut,mix well & cook on low flame for 2-3 minutes.<br />-Add milk & mix well.<br />-Add mango puree,sugar,milk powder,mix well & cook on low flame for 14-15 minutes.<br />-Add cardamom powder,mix well & cook on medium flame for 10-12 minutes.<br />-Add desi ghee,mix well & cook for 3-4 minutes.<br />-Add desi ghee & cook on medium flame until it leaves the sides of the pan.<br />-Wrap cling film on one side of rectangular mold.<br />-Transfer barfi mixture & spread evenly.<br />-Mark the pieces & decorate with cashew nuts,pistachios & rose petals.<br />-Let it cool at room temperature & refrigerate for 2-3 hours.<br />-Cut into pieces & serve!<br />
