The origin of this dish dates back to Guilan Province, northern Iran.<br />You can prepare an unforgettable meatless dish with a few simple ingredients.<br />I really love this dish because of the smoky flavor of grilled eggplant and garlic.<br />served with both rice and bread, but I prefer to have it with freshly-baked bread.<br />Today, I’ve baked an Iranian traditional bread called Taftoon. It’s very easy and enjoyable to bake taftoon on a cast iron pan, which is called a saj. <br /><br />Ingredients for 6 Servings :<br />2 kg of Eggplant<br />10 Medium Tomatoes<br />6 Cloves of Garlic<br />2 Tablespoons of Tomato Paste<br />4 Eggs<br />Salt, Black Pepper Powder and Turmeric Powder as Needed<br /><br />Ingredients for 8 Taftoon Bread:<br />800 gr. Baking Flour<br />20 gr. Sugar<br />10 grams of dry yeast<br />10 gr.
