This dish is a beloved part of Azerbaijani cuisine, often enjoyed during festive occasions and family gatherings.<br /><br />Ingredients:<br />For the Filling:<br /><br />500 grams minced meat<br />180 grams smoked tail, finely chopped<br />1 large onion, finely chopped<br />2 tablespoons barberry (20 g)<br />1 teaspoon salt<br />0.5 teaspoon black pepper<br />0.5 teaspoon red pepper<br />0.5 teaspoon turmeric<br />For the Dough:<br /><br />1 kg flour<br />1 teaspoon salt<br />1 tablespoon sugar<br />3 egg yolks<br />3 tablespoons sour cream<br />70 ml melted butter<br />200 ml milk<br />Enough water to make the dough pliable<br />Instructions:<br />1. Prepare the Filling:<br /><br />In a mixing bowl, combine the minced meat, chopped smoked tail, and chopped onion.<br />Add the barberry, salt, black pepper, red pepper, and turmeric.<br />Mix thoroughly until all ingredients are well incorporated. Set aside.<br />2. Prepare the Dough:<br /><br />In a large mixing bowl, sift the flour and add the salt and sugar.<br />Make a well in the center and add the egg yolks, sour cream, melted butter, and milk.<br />Gradually add enough water while mixing to form a smooth and pliable dough.<br />Knead the dough on a floured surface for about 10 minutes until it becomes elastic and smooth.<br />Cover the dough with a damp cloth and let it rest for at least 30 minutes.<br />3. Assemble the Chudu:<br /><br />Preheat your oven to 180°C (350°F).<br />Divide the dough into equal portions and roll each portion into a ball.<br />On a floured surface, roll out each ball into a thin circle.<br />Place a generous amount of the meat filling in the center of each circle.<br />Fold the edges of the dough over the filling, pinching to seal and form a neat packet.<br />Place the chudu on a baking sheet lined with parchment paper.<br />4.
