Schezwan sauce is basically a Chinese sauce... It is very spicy and hot...<br /><br /> ingredients:<br /><br />15 red chilies ( presoaked for 1 hour) deseeded<br />20 cloves of garlic<br />2 tbsp grated onions<br />1 tbsp grated ginger<br />2 tbsp tomato sauce<br />1/2 tbsp crushed black pepper<br />3 tbsp vinegar<br />1 tsp sugar<br />1 tsp soya sauce<br />1 tbsp salt<br />4-5 tbsp<br /><br />method:<br /><br />put a pan on high flame and add 4-5 tbsp oill.more oil is neede as oi act as a preservative.<br />add garlic and saute it low flame till it get golden in colour.<br />transfer the garlic into a bowl and et it cool.<br />transfer the red chillies and garlic into a mixing jar.. blend it.<br />add<br />turn on the flame and add onions in the same pan.<br />add ginger and saute it for 1 minute.<br />now add red chilli and garlic paste.<br />saute it well for 5 minutes.<br />add a little water,sat sugar black pepper and soya sauce.mix well<br />when the oil starts seperating add tomato sauce and vinegar. mix well.<br />add half cup of water to make a saucy texture.<br />cook it on low flame for five minutes.<br />turn off the flame and let it cool.<br />transfer it into air tight container and store it into fridge for 15-20 days.
