If people didn't already know that February is the month of love, Lavinia made sure to remind them of that via her outstanding Valentine's special dish. <br /><br />"Presenting the viral, my all-time favorite crispy 'Potato Hearts,'" Lavinia shared with WooGlobe. "Start by washing, peeling, and cutting the potatoes. Boil them in salted water for 10-12 minutes until fork-tender. Then, drain and mash the potatoes using a potato ricer. Stir in the cornstarch, spices, and finely chopped parsley until the mixture forms a smooth dough.<br /><br />"Roll out the dough to 1.5-2 cm thick on a cornstarch-dusted surface (make sure the dough doesn’t stick). Use a heart-shaped cookie cutter to cut out your shapes, or keep it simple with small balls. <br /><br />"After that, heat peanut oil to 160°C/320°F. Fry the potato hearts in batches, flipping gently until golden and crispy on all sides. Transfer to a paper towel-lined plate to drain any excess oil.
