Try these chicken Fajita rice today quick, low calorie and irresistible!<br /><br />Ingredients:<br />Prepare Fajita Chicken:<br />Cooking oil 3-4 tbsp.<br />Garlic chopped ½ tbsp.<br />Boneless chicken julienne 500g<br />Lemon juice 1 & ½ tbsp.<br />Red chilli powder ½ tsp. or to taste <br />Cayenne powder ½ tsp.<br />Dried oregano 1 tsp.<br />Garlic powder 1 tsp.<br />Paprika powder 2 tsp.<br />Salt 1 tsp or to taste<br />Black pepper powder ½ tsp.<br />Onion sliced 1 medium <br />Capsicum (red, green, yellow) julienne 1 cup<br /><br />Prepare Tomato Sauce:<br />Cooking oil 1 tbs.<br />Tomatoes 4 medium <br />Garlic cloves 5-6<br />Onion 1 medium<br />Jalapenos deseeded 2-3<br />Water 1 Cup<br />Lemon juice 1 tbs.<br />Salt 1 tsp. or to taste<br />Fresh coriander handful<br />Assembling:<br />Rice boiled <br />Iceberg shredded <br />Corn cob<br />Lemon slices <br />Cherry tomato<br /><br />Directions:<br />Prepare Fajita Chicken:<br />In a wok, add cooking oil, garlic & mix well cook for 1 minute.<br />Add chicken & mix well sauté until it changes color. <br />Add lemon juice, red chilli powder, cayenne powder, dried oregano, garlic powder, paprika powder, salt, black pepper powder, mix well & cook for 4-5 minutes.<br />Add onion, capsicum (red, green, yellow) mix well & set aside.<br />Prepare Tomato Sauce:<br />In frying pan, add cooking oil, tomatoes, garlic, onion, jalapenos & sauté for 2-3 minutes.<br />Add water, lemon juice, salt, mix well & bring it to boil, cover & cook on medium flame until ½ cup water is left (4-5 minutes). <br />Let it cool.<br />Transfer it to a blender jug, add fresh coriander, blend well & set aside.<br />Assembling:<br />In a serving plate, add boiled rice, prepared fajita chicken, prepared tomato sauce, iceberg, corn cob, lemon slices, cherry tomato & serve!
