Melt in the Middle Cheesy Garlic & Herb Pancakes<br /><br />AD / @kitchenwithmba asked me to cook up something special for Pancake Day...<br />I was tempted to do something sweet with their GORGEOUS Sicilian Lemon Pancakes, but as you know, I'm a savoury girl...so I decided to make Melt in the Middle Cheese Pancakes, with not just butter, but garlic and herb butter!<br />These were just SO good perfectly fluffy, very cheesy...served with a bit of salad and Taste the Difference Dry Cure Bacon, this might be the best pancake dinner I've EVER had!<br />I've written up the recipe for these below, let me know in the comments if you'd choose sweet or savoury pancakes! A x<br />#kitchenwithmba #pancakes #pancakeday<br />#SweetOrSavoury #tastethedifference #sainsburys<br />Makes 5 pancakes<br />140g self raising flour<br />1 tsp baking powder<br />20g soft butter (plus extra for frying)<br />140ml milk<br />2 eggs beaten<br />1 tsp finely chopped fresh chives<br />5 slices of Sainsbury's Sliced Gouda<br />Cheese<br />For the garlic butter:<br />30g butter<br />1 tsp Sainsbury's dried parsley<br />1 tsp Inspired to Cook Garlic Paste<br />Serve with Taste the Difference Dry Cure Bacon and salad<br />Sift the flour into a bowl and stir in the baking powder.<br />Make a well in the middle. Add the butter and milk, chives and beaten eggs.<br />Season with salt and pepper.<br />Whisk until smooth and leave to stand for 10 minutes.<br />Heat a small knob of butter in a non-stick pan on a medium heat. Spoon thin circles of batter into the hot pan, roughly the size of the top of a mug. Tear a slice of gouda into quarters.<br />Arrange all 4 quarters on top of the pancake batter as soon as it goes in the pan. Gently press it into the batter.<br />Drizzle a little more batter over the cheese and spread a thin layer until the cheese is covered.<br />Fry until little bubbles start to open up in the batter.<br />Turn them over and fry for a couple of minutes until golden brown on both<br /><br /><br />
