Soy sauce<br />Fry for an average of 7-8 minutes. Turn over every 2 minutes.<br /><br />Batter. Ingredients for 2 chicken breasts.<br />2 Chicken eggs<br />2 tbsp. Chopped herbs (green onions and parsley 50/50)<br />2 tbsp. Grated Parmesan<br />Salt / Pepper / Chili to taste<br />50 ml Milk<br /><br />1) Cut the chicken breast in the style of the Butterfly, beat off the thick places. We achieve a uniform thickness of 1.5 cm on average.<br /><br />2) Heat a frying pan over medium heat + 2 tbsp. Olive oil + 1 tablespoon of butter.<br /><br />3) Breast in flour - in batter = in a frying pan.<br />Attention!!! do not overheat the pan and oil, otherwise the eggs on the meat will quickly burn. Fry over medium heat for 4 minutes on each side = 8 + minutes<br />The chicken is cooked at a temperature of 70 * C in the thickest place.<br />Use a cooking thermometer.<br />Set aside cooked chicken, on a warm plate.<br /><br />Cooking the sauce:<br />De-glaze the pan with white wine 100 g and 50 g Grappa or whiskey / cognac<br />Flamming (but not necessarily, the alcohol will evaporate itself )<br />Add 100 gr of Strong chicken broth.<br />Reduce it in half.<br />1 clove garlic, minced<br /><br />2 tbsp. chopped greens (parsley and green onions)<br />30 grams of butter.
