Ingredients:<br />1 green bell pepper chopped<br />1 cup water<br />1 1/2 cup rice cooked<br />2 tbsp olive oil <br />2 tsp garlic minced<br />1 cup diced onions <br />1 1/2 cup tomatoes diced<br />3/4 tsp cayenne pepper<br />1 cup frozen peas and carrots<br />2 tbsp parsley chopped<br />Salt and pepper to taste<br /><br />Preparation:<br />Take a large sauce pan, heat the olive oil in the pan. <br />Sauté finely chopped onions, garlic and salt in the heated oil. Now add vegetables, black pepper and cayenne pepper and mix well. <br />Add the tomatoes and mix. <br />Add water and parsley.<br />Now add rice and mix gently.<br />Serve hot.
