Grilled Potato with blue cheese & arugula <br /><br />This is the Sobeys take on a summer classic recipe.<br /><br />Prep time: 5 min.<br />total time: 20 min. serves: 4<br />Heat barbecue to high. <br />Poke 3 medium red potatoes a few times with the tip of a knife and microwave on HIGH for 2 min. or until slightly softened. <br />Slice into 1⁄2-in. (1 cm) rounds. <br />Grill 5 min. on each side or until golden and crisp. <br />Arrange 3 cups (750 mL) arugula in a shallow serving bowl. <br />Top with potato slices. <br />Add 3 tbsp (45 mL) Sensations by Compliments blue cheese dressing and toss to combine. <br />Garnish with 1 tbsp (15 mL) blue cheese and 1 tbsp (15 mL) finely chopped fresh Compliments chives.
