The nerve center of the sushi trade is Tokyo's Tsukiji market, where the daily catch is delivered on ice, in custom-made wooden boxes called "coffins." This phenomenal growth in the demand for sushi has come at a cost: overfishing has led to depleting fish stocks, which in turn has threatened the balance of the ocean's ecosystems.
