Ingredients<br />4 lbs (2 Kg) sweet potatoes <br />4 tablespoons (60 mL) unsalted butter<br />¼ cup (60 mL) pure maple syrup<br />Coarse salt and ground pepper<br /><br />Directions<br />Preheat oven to 400ºF. Pierce sweet potatoes all over with a knife. Place on middle oven rack. Bake until very tender when pierced with a knife, around 1 hour. When cool enough to handle, cut sweet potatoes in half. Then with a spoon, scoop out flesh into a food processor - you can discard the skins. <br /><br />Add butter and syrup; process until smooth. Season with salt and pepper.
