1 cup bran<br />1 cup buttermilk<br />⅓ cup butter<br />½ c brown sugar<br />2 Tbsp honey<br />1 egg<br />1 cup AP flour<br />2 tsp baking powder<br />½ tsp baking soda<br />1 tsp salt<br /><br />Method:<br /><br />Pre-heat oven to 375ºF<br />Soak bran in buttermilk. Cream together butter and sugar, then beat in honey and egg. Mix in the bran that's been soaking in the buttermilk.<br />Mix together the dry ingredients: flour, baking soda, baking powder, and salt.<br />Add the dry ingredients to the wet - and mix just until moist. Don't over mix!<br /><br />Bake for 15 - 20 minutes. Makes 6 jumbo muffins.
