Sour Cream Vegetables Over Brown Rice - Vegetarian Recipe<br />Serves 4<br /><br />Rice (INGREDIENTS)<br />1/2 cup brown rice - washed<br />1 and 1/2 cups water<br />salt<br /><br />Cook the rice in water and salt. Keep aside.<br /><br />Sour Cream (INGREDIENTS)<br />1 cup cream<br />1/2 lemon - juiced<br />2 cloves garlic - crushed<br />1/2 tsp nutmeg powder<br />1/2 tsp mixed herbs<br />1/2 tsp mustard paste<br />2 tsp red chilly powder<br />1/2 tsp clove powder<br />salt - to taste<br /><br />To the cream, add all the remaining ingredients. Mix well and keep aside.<br /><br />Vegetables (INGREDIENTS)<br />2 cups mixed vegetables - carrots, cauliflower, broccoli, green onions, zucchini, baby corn, peas- chopped<br />1 tbsp oil<br /><br />Heat the oil. Add 1 tsp salt. Saute vegetables. Stir over high flame till half cooked. Lower heat. Add the cream mixture. Stir well. Add 1/4 cup water. Boil once. Adjust salt. Remove from heat. Set aside.<br /><br />Garnish -<br />10 almonds -slivered<br /><br />Assemble -<br />Spread the warm rice on a serving dish. Pour the hot vegetable mixture over the rice. Garnish with almonds. Serve hot.
