Coffee Time Muffins<br /><br />Ingredients:<br />2 cups (250g) AP flour<br />⅓ cup (75g) sugar<br />¼ cup (75g) dark brown sugar<br />2 teaspoons (10 mL) baking powder<br />4 teaspoons (20 mL) instant coffee<br />1 teaspoon (5mL) ground cinnamon<br />1/4 teaspoon (1.25 mL) salt<br />1 egg<br />1 cup (225mL) milk<br />½ cup (110mL) vegetable oil<br />1 teaspoon (5mL) vanilla<br /><br />Method:<br />Preheat the oven to 375ºF (190ºC)<br />In a large mixing bowl, combine the flour, sugars, baking powder, coffee granules, cinnamon and salt.<br /><br />In another bowl, combine the egg, milk, oil and vanilla. Fold the wet mixture into the dry mixture until just moistened - do not overmix! Fill prepared muffin cups 3/4 full.<br /><br />Bake for 22-24 minutes or until a skewer comes out clean.
