Cheddar 'n' Bacon Waffles

Cheddar Bacon Waffles<br /><br />Sweet and savoury waffles for your next weekend breakfast / brunch!<br /><br />Ingredients<br />2 eggs, well beaten<br />1 cup (250 mL) milk<br />3 tablespoons vegetable oil<br />1½ cups (375 mL) AP flour<br />3 teaspoons baking powder<br />2 teaspoons sugar<br />½ teaspoon salt<br />1 cup (250 mL) Sharp Cheddar Cheese, Grated<br />6 pieces cooked bacon<br /><br /><br />Method:<br />Preheat oven to 375ºF. Arrange bacon in a single layer on a rack over a baking sheet. Place in the upper third of the oven and bake until bacon is brown and crispy, about 10 to 15 minutes. Remove from oven & once cool, chop the bacon into bite size bits and set aside.<br /><br />Whisk together the eggs, milk, and oil in a large bowl. Stir in flour, baking powder, salt, and sugar until batter is smooth. Stir in bacon & grated cheese.
