So you say you don't eat quiche? How about bacon 'n' cheddar breakfast pie?? This one is super easy, especially if get all lazy like we did and use a frozen pie shell… (don't tell the ChowHounds)<br /><br />1- 9" pie crust<br />½ cup cream <br />½ cup milk<br />4 eggs, beaten<br />salt and pepper<br />4 slices bacon, cooked and crumbled<br />1 cup grated Cheddar cheese <br />1/4 cup grated Parmesan cheese<br />chopped green onion, or mushrooms<br /><br />Method:<br />Heat oven to 350°F. <br />In medium bowl, mix cream, milk, eggs, salt and pepper; set aside. Layer bacon, cheeses and onion in crust-lined plate. Pour egg mixture over top.<br />Bake 40 to 50 minutes or until knife inserted in centre comes out clean. Let stand 5 minutes; cut into wedges.
