A cross between a buttermilk pie, and a chess pie.. It's all south and full of flavour!<br /><br />1½ cups sugar<br />1 tablespoon cornmeal<br />2 tablespoons AP flour<br />Pinch of salt<br />½ cup of butter, melted<br />½ cup of buttermilk<br />2 teaspoons vanilla<br />4 large eggs<br />Zest from one lemon<br />Juice of ½ of a lemon<br />1 9" unbaked pie shell<br /><br />Preheat oven to 350ºF. Whisk together the sugar, cornmeal, flour and salt. To that add the butter, buttermilk, and vanilla & mix. Beat the eggs, and add to sugar mix. Stir in lemon zest and juice. Pour mixture into the pie shell.<br /><br />Bake at 350ºF for 30-35 minutes until golden brown and set.
