Nothing goes together like peanut butter and chocolate… add in some bacon, and these cookies are top of the list!<br /><br />1/2 cup (125 mL) unsalted butter, at room temperature; <br />1/2 cup (125 mL) peanut butter <br />1/2 cup (125 mL) granulated sugar<br />1/2 cup (125 mL) dark brown sugar<br />1/2 tsp (2 mL) vanilla extract<br />1 large egg<br />1 1/4 cup all-purpose flour<br />1/2 tsp (2 mL) table salt<br />1 cup chocolate chips<br />4-6 strips bacon, fried and crumbled<br /><br />Method:<br />Pre-heat oven to 375ºF<br />Cream butter, peanut butter, sugars, vanilla and egg until fluffy and light colour, about 2 minutes.<br />In another bowl, combine flour, salt, baking powder. Stir flour mix into peanut butter mixture. Stir in chocolate chips.<br />Using a tablespoon, scoop dough into hands and roll into a ball. Then place onto an ungreased baking sheet and place about 2" (5 cm) apart. Squish with a fork. Sprinkle bacon over top of each cookie and squish again.<br />Bake to desired doneness,about 8 to 10 minutes. Cool 5 minutes in pan. Transfer to wire racks to cool completely.<br />Makes about 30.
